Cold smoking cheese is very easy taking only 4 hours - it is best then wrapped in cling film and refrigerated for 4 days. This process will transform a basic cheddar cheese into a five star cheese.

Whatever you are cold smoking why not cold smoke other items at the sametime and if you only need to smoke for 4 hours then just half full your cold smoke generator with wood dust.

If your wood dust goes out it could be that the wood dust has too much moisture. Oak wood dust is better for being compacted by lightly pressing it down in your cold smoke generator.
