Hi Roy , just thought I would send you a mail to let you know how pleased I am with the cold smoker and service / advice you sold me! I used an old milk churn , placed the cold smoker in it and with a few holes to get the air flow right produced the best smoked trout I have ever had ! Now for the salmon ! Many thanks indeed for the safe and prompt delivery of my Proq Excel. Delighted to report a very shallow learning curve and stunning early successes with smoked turkey crown and pork ribs with a shoulder of lamb pencilled in for the weekend.

Evaluating wet smoking alongside traditional grilling and even indirect cooking (oven roasting) on a traditional barbie is like comparing chalk and cheese. Smoking is easier, it's far more fun and offers greater options for creativity and personal taste. What's more and the results are incomparably better.

smoker works fantastic, and we learnt a lot. We put mackerel fillets, whole sardines, and tail fillet of salmon on the smoke. We learnt a lot, rule one, do not overdo your wet brine with salt, number two do not mix your fish as different thickness needs different times, and number 3 be exact how long you leave your fish in the brine. We got distracted and left it in 4 hours more. Mackerel was salty our fault, sardines very nice and salmon was liked best by us and our Spanish friends which we used as guinea pigs.We used the apple wood chips. Another try this weekend, with orange wood, will make some photos and will pass them on to you.
We are satisfied to have bought the Amigo smoker.
